Cranberry and Turkey Crostini With Gucamole

Description
These tasty little festive treats make a great finger food for when entertaining over the Christmas period.
1 baguette, sliced into approx ¼ inch slices
4 tbsp olive oil
4 bacon rashers cut into fine strips
5 slices cooked turkey breast
Salt and freshly ground black pepper
3 tbsp cranberry sauce
For the guacamole
1 ripe avocado, peeled, stone removed
1 garlic clove, finely chopped
½ lemon, juice
½ red chilli, seeds removed and finely chopped
Salt and freshly ground black pepper
Instruction Steps
- First make the crostini. Preheat your oven to 180c fan/200c/gas 6. Place the sliced baguette into a bowl and stir through the olive oil. Lay the bread onto a baking tray and cook for 6-8 minutes until just crisp and golden. Remove from the oven and leave the crostini on the tray to cool.
- Now cook the bacon pieces. Add a little olive oil to a heavy based frying pan and heat over a high heat. Fry the bacon until crisp and then drain on kitchen paper.
- Now make the guacamole. Roughly chop the avocado and place in to a bowl.
- Add the lemon juice and salt and pepper. Mash with a fork and then add the chopped chilli and garlic. Mix through the lemon juice and season with salt and pepper.
- Top each crostini with some sliced turkey, chopped bacon, guacamole and a little cranberry sauce.
- Serve warm or cold
Chef's Tips
The crostini can be served cold or hot.
To heat them, just place the topped crostini under your grill for a minute or 2.
